One of the things that I love most about summer months is that there always seems to be some sort of celebration or party. We just came off of a weekend with Cinco de Mayo and the Kentucky Derby and we are now heading into Mother’s Day and Memorial Day. There always seems to be a good reason for a tasty snack or appetizer to serve guests. I love coming up with fun new ways to serve some of my favorite foods which is where the idea for Greek Chicken Fries were born!
I’m not talking about the chicken fries that you get at a certain fast food restaurant. Although, I do love those chicken fries. This is more of a nacho-style platter using waffle fries and grilled chicken with some other delicious ingredients to form the perfect party appetizer! I made these for the Living Litehouse blog a couple of months ago for March Madness party season but they really are an all-around great appetizer any time of the year. Having friends over for a summer cookout? These go great with grilled burgers! Having a game-night? Also perfect.
